Another one of my go-to dishes when I'm craving Japanese food. The okonomiyaki is a type of Japanese pancake that, together with takoyaki, conjures up images of the boisterous city of Osaka. At most okonomiyaki restaurants in Japan, you sit at a table with a hot plate in the centre, where the pancake is freshly made in front of you. 

In Japan, making okonomiyaki is quite simple. You can buy okonomiyaki mix and sauce at the supermarket. I've seen some asian groceries in NL selling them but at a considerably higher price. Since moving here, I've learnt to make (almost) everything from scratch and I'd like to share the recipe with you in this post. 

Ingredients

Sauce

  • Soy sauce: 1 tablespoon
  • Worcestershire sauce: 2 tablespoons + 1 teaspoon
  • Ketchup: 3 tablespoons
  • Sugar: 1/2 teaspoon
  • [optional] Dark soy sauce: 1-2 teaspoons
  • [optional] Corn flour/potato starch: 1-2 teaspoons

Okonomiyaki batter

  • Cake flour (see earlier post): 200g
    • or oat flour: 200g
  • Dashi powder: 8g
  • Baking powder: 1/2 teaspoon
  • Eggs: 2
  • Water: 350g
  • Cabbage: 400g
  • [optional] cheese: 50-100g
  • [optional] meat/bacon/shrimp/squid: 100-150g

Garnish

  1. Mix the sauce ingredients in a bowl and that's it. Personally, I prefer a darker colour and a slightly thicker sauce, so I would add some dark soy sauce and corn flour and heat the sauce in the microve at 900W for about a minute. 

     

  2. Cut the cabbage into small pieces (about 1cm).


  3. Mix the batter ingredients. You can be quite creative the flour. I like to use wholewheat flour or oat flour to feel like I'm eating healtily. Sometimes I add in some cheese and meat as well. 


  4. Add the cabbage into the batter.


  5. Heat up a pan and oil it. Scoop one and a half ladle-full of batter into the pan and shape with a spoon.


  6. Fry on medium-medium high heat for about 5mins until brown then flip to the other side for another 3mins. Adjust the time according to how burnt you like your pancake. I prefer mine dark, like my humour.


  7. Dish the okonomiyaki and brush a layer of sauce. Garnish or add some mayonnaise if you like. The bonito flakes also make for a good visual (see here).

お好み焼きの作り方は紹介する必要ないと思って、今回はお好み焼きソースの作り方のみ投稿しました。アジアンスーパーで一応買えますが、値段は少し高いですので、ソースの作り方覚えといたら便利だろうと思いました。しかも、お好み焼きしょっちゅう作らないと、ソースの賞味期限が切れてしまいますので、必要な時に少量で作ればいいじゃないかと。

材料

  • 薄口醤油:大さじ1
  • ウスターソース:大さじ2+小さじ1
  • ケチャップ:大さじ3
  • 砂糖:小さじ1/2
  • [好みで]濃口醤油:小さじ1〜2杯
  • [好みで]片栗粉/コーンスターチ:小さじ1〜2

  1. 以上の材料を混ぜます。自分は濃いめなほうが好みなので、濃口醬油で色を調整します。ソースが水っぽいと思う方は、片栗粉かコーンスターチを入れ、900Wのレンジで1分程度チンしてください。
