Mum's meat sauce 媽咪的番茄牛肉蛋

This was a dish my mother used to make when I was younger. To me, this simple and humble meat sauce is definitely the taste of home, literally. It's super easy to make so definitely my recommendation for a quick, one-dish, home-cooked meal. I've simplified the recipe because unlike my mother, I'm super lazy. And because I'm super lazy, I'm not going to be too detailed with the instructions and assume you have some basic cooking skills and common sense. Otherwise, you're in the wrong place. Also, I sometimes cook with the microwave to save time. If this horrifies you, as the Dutch would say, rot op. 

Ingredients
  • 300g minced beef
  • Marinade (just rule of thumb, adjust to your tastes)
    • 1/2 tbsp cornflour
    • 1 tbsp soy sauce (I prefer Japanese)
    • 1 tsp sugar
    • 1 tsp sesame oil
  • 4 eggs
  • 4-5 pcs tomatoes (more if you prefer more or use 1 can of diced tomatoes)
Instructions (this brings back memories of writing science experiments back in sec school)
  1. Marinate the minced meat with the marinade ingredients for about 15 mins. 
  2. [Optional] If you're using fresh tomatoes, slice them into quarters and microwave them for about 10 mins at 700W. Or adjust it according to your own damn machine. You want the tomatoes semi-cooked. This is just to shorten the cooking time a bit. My mother would also peel the tomatoes but I cannot be bothered.   
  3. Stir-fry the minced meat with a bit of oil. Minced beef is usually quite fatty so once it starts heating up, you can just cook it in its own fat. 
  4. If you can multitask, beat the eggs with a pinch of salt and pepper (or as much as you like) while the meat is cooking. If you can't, maybe cooking is not for you. 
  5. Dish out the meat and make sure to keep as much of the oil/fat mixture as you can in the pan. 
  6. Fry the egg with that oil/fat mixture (thus saving you some oil) and then cut it randomly into bite-sized pieces. Dish out.
  7. Stir fry the tomatoes until they liquefy or just pour in the canned diced tomatoes. 
  8. Mix in the meat and eggs.
  9. Season with salt and sugar to your liking. 
  10. Serve with rice.
